Ok, so winter is far from over and just when the sun comes out and the snow starts to melt, bam! Another big snow storm comes along and snows all over our spring parade. Well, in the meantime I wait out the bare-ankle weather, I'm consoled by the thought of warming up each morning with bowls of these delicious oats. Toppings can vary any which way you would like, but banana maple is a great start!
Ingredients:
1/2 Cups Whole organic oats (Gluten free if needed)
1 1/2 Cups Coconut milk (I use the no-sugar added)
Banana for slicing, flax seeds for sprinkling and maple syrup or maple caramel for drizzling
Get-to-work:
Mix oats and coconut milk in a small saucepan and set covered overnight in the fridge. In the morning, bring to a slow boil while stirring occasionally then reduce heat to low and cook 20 minutes, stirring often so it doesn't stick on the bottom. Add more coconut milk if needed to reach your desired creaminess. Top with sliced banana, flax and maple. Enjoy!
