Kale and Quinoa Salad
Resolutions are so hard to stick to aren't they! If you're like me, you've got healthy eating resolutions filling up that list for 2015, but boring is not my thing when it comes to food... simple yes, boring no! If I'm going to eat greens I want them to taste amazing and so they should!
Right now I'm so addicted to massaged kale. What's that you ask?
A relaxed kale is a delicious kale in my book, so I shred the washed and ribbed leaves of young dinosaur kale (don't you love the name, totally kid friendly if you ask me!) and add to a bowl with the juice of half a lemon and a tablespoon of my favorite EVOO. Then massage liberally with my clean bare hands for a few minutes.
Finally I add in my favorite salad ingredients: crisp spinach, fresh tomato, cucumber, roasted beets, cooked quinoa and a bunch of cilantro, but mint would be delicious here too! Then top with crumbled goat's milk feta and you'll be making the most of a meat-free, environmentally friendly meal! A delicious and easy way to stick with one resolution at least :)
